Ok, the "Erbazzone" is a traditional recipe of my home region and there are all sorts of different variations. Nowadays it is mostly made with spinach (heresy), but originally it was done with all sorts of wild greens. The name means basically "Grass pie"! I mostly do it with nettles.

Use your favourite pie dough, or even flaky pastry. Orinally the pastry was done with flour and pork fat Eeker. This is the region of the famous Parma ham, pork was a the base of lots of recipes.

The filling is done with, onion, about one kilo of nettles cleaned and roughly chopped, two cloves of garlic (or more, to taste) 100-200 g of diced bacon, and some 150 g of grated parmesan cheese. Salt and pepper to taste, and a pich of chili if you like.


You lightly fry the onion, bacon and garlic in a bit of oil, then add the nettles and stir until they are dark and soft, then add the cheese, and spoon the stuff in the pie bottom. Cover with more dough and bake until golden.

SOme also put grated bread in the filling, and some put a bit of ricotta. That makes it very sweet and soft, rather nice actually.

I once went to a vegetarian/kosher Chinese restaurant and had Sesame Chicken that was made out of tofu instead of chicken. It really tasted good, but that was probably from the sauce it was surrounded in. That was my one and only experience with tofu.

I have watched a cooking show on T.V., where the cook makes everything out of tofu, including S'mores. I'm not the slightest bit interested in trying that. I'll stick with the real thing.

Tofu is pretty much tastless. It takes on the flavor of the food, sauces and spices that it is prepared.

I think most folks first experience with Tofu is Miso Soup.

My kids love it along with its parents Edamame.

I have tried Tofu and enjoyed it. Especially with say vegetables in a veggie burger and whatnot. Haven't tried it on its own but ive been told it's not very palatable. I agree with the moderation comment.. As long as you hold back from stuffing yourself with (add food product here), you're good to go.
